From the moment it is roasted, coffee begins a natural evolution: it first improves, stabilizes, and over time starts to lose aromas, sweetness, and definition.
📅 Coffee life phases at DFRNT:
🟩 7 days – 2 months:
The optimal point. The coffee has lost the CO₂ that affected extraction and retains all its aromatic nuances.
🟨 2 – 4 months:
Still balanced, but starts to lose intensity. Ideal for filter methods or with milk.
🟧 4 – 12 months:
Loses body, sweetness, and complexity. It is not defective coffee, but it no longer reflects its origin.
🟥 More than 12 months:
Not recommended. Oxidation has done its work: the coffee is flat and characterless.
💡 Tip:
Always store whole bean coffee in its original bag with a valve or in an airtight, opaque container. Avoid moisture, heat, and direct light.
